Five years ago, this space was nothing more than an empty storefront with good bones and terrible lighting. Our chef had just returned from years of working in acclaimed kitchens across Montreal, Vancouver, and abroad. Building From the Ground Up

We spent six months before opening just talking to farmers, fishermen, foragers, and producers. Not about prices or logistics, but about what they were passionate about. A dairy farmer who refused to expand beyond forty cows because he knew each one by name. A woman who foraged mushrooms in forests she'd explored since childhood. A fisherman who only caught what he could sell that day.

Our suppliers aren't vendors. They're partners who share our belief that quality cannot be rushed or scaled carelessly. When the season changes, they're the first to tell us what's ready and what needs more time.

Opening Night

We opened on a Tuesday in November. Eighteen seats. A menu that fit on one page. The kitchen was so small our chef could reach everything without moving his feet. We'd invited friends, family, and a few food writers who'd been kind enough to show interest.

That's why you won't find imported truffles here in July when they're wildly out of season. It's why we close on Mondays, giving the team time to rest and the kitchen time to prepare properly. It's why we limit reservations, even when we could easily fill more tables.

We're not chasing awards or recognition, though we're grateful when they come. What we're after is something harder to quantify: the feeling you get when you walk through our doors and know you're somewhere that values the same things you do.
